I spent the evening attempting to make “hi-hat” cupcakes (<–clickable!). While the cupcake itself was quite delicious and, though not the red of red velvet still wonderfully tasty, the “hat” was, uh… not so hatty. I blame this on several things, not least of which is that I don’t have an adequate double boiler, and also that I never use candy thermometers. Perhaps that’s why I’m so bad at making candy. STILL the cupcakes were lovely, if excessively sweet! Hi-hats are not for the faint of heart. I was surprised at how much the Japanese folks liked them, considering that they usually don’t like sweet things.
